Customs of the East of Venezuela: Knowing how cassava cake is made.

The casabe is an essential food in the oriental table of Venezuela, its importance is very similar to the one bread or arepa have in other regions of the country. Below I detail the stages of your craft production process.

Step # 1: Scratched of bitter yucca

The elaboration of cassava starts with the reception of bitter yucca. This tuber is removed from its hard shell and washed to remove any kind of dirt. Peeled yucca is allowed to dry for a short period of time. When the pieces of cassava are dried, they are passed through a ray with which the texture of the raw material is modified.

Step # 2: Pressing the grated yucca

The grated yucca is introduced into sacks in order to continue the process of making cassava. These bags are subjected to a mechanical extraction process of the liquid known as yare, applying pressure by means of a manual press. This process takes approximately 24 hours. Cassava starch is made with the extracted liquid, which is used in the preparation of other foods or even to treat diaperitis in children..

Step # 3: Grated cassava sifting

After yare extraction, the yucca is passed through a sieve in order that it has the same texture. Sifting is also a manual process.

Step # 4: Baking cassava cake

From the cassava sifted proceeds to the cooking of cassava cakes. This is spread over a budare or large iron.

The person who carries out the cooking of cassava is known as a dresser

For the cooking of cassava cakes, firewood is required. Some producers use gas cylinders.

The dresser distributes the cassava sifted uniformly throughout the budare. To give the round shape makes use of a wooden spatula. Also, with an iron, also made of wood, it gives a uniform thickness to casabe cake. With a palm brush remove surplus material during cooking to prevent them from burning and give an ugly appearance to the cassava cake.

The cassava cake is cooked on both sides. The dresser requires a spectacular skill to make the turning of the casabe cake. After cooking, the still wet cassava cake is placed on another table to bring it to the final drying process. Some buyers prefer to bring the cassava cakes moist to enjoy them immediately.

Step # 5: Drying the cassava cake

The process of elaboration of cassava concludes with the drying of the cakes, these are placed along a kind of table under the heat of the sun.
