Cooking with Diamantis 8 : Chicken Thighs and Rice

It’s been quite a while since I last cooked. I was pretty busy travelling and stuff. But this Sunday I had all the time I needed to prepare a good meal. I made some chicken thighs with white sauce and basmati rice.

What you need

Chicken Thighs (boneless). They were around 600 gr.
A pack of Basmati Rice. 500 gr
A pack of cream. 200 ml
Salt,pepper and oregano.
Olive oil.
Mustard.
Curcumin as it is the strongest antioxidant known to man.

Putting it all together

Get the thighs out of the fridge in order to have room temperature. Cut them in pieces and put some salt and pepper.

Put some olive oil to a non-stick pan or a pot. It’s not the kitchenware that matters, it is the technique… As you will see I will use one pot for the whole recipe, which is so much easier. Plus, you have less things to wash.

Saute the chicken. You can also slice an onion and a couple gloves of garlic.

When it gets a nice color add water and the cream. I have added some mustard as well. I have added some spices like curcumin, cumin and cinnamon. All those spices gave a curry like flavor to the dish, which I particularly liked. And a ruby color …

Let it shimmer for at least 30 minutes. In the same pot we will add the rice. Basmati rice doesn’t need much time to cook so add 5-7 minutes before the end.

Just make sure to stir the pot very often because rice tends to stick to the bottom and we don’t want that. If needed you can add some water. It depends how soupy you want it.

Enjoying

Here is the dish. Spices took it to another level. Kitchen smelled like the far East.

You can make the same recipe with chicken breast.

Of course, you can add some crated cheese that will melt and blend with the rice.

With the quantities above I got 3 servings and will not worry about cooking till Wednesday.

It looks very tasty. About the curcumin, they told me that the effect wil be stringer if you mix it with black pepper.
