These look great - and I am so intrigued by the yeast in the glaze. What does it do while in the glaze?? The simple cookie with coffee flavored glaze sounds like a great breakfast treat :)

I got this tip of adding yeast from a friend, it make the top of the cookies to get like a sticky texture.
