An Ecuadorian-Influenced Lunch

Yesterday @nicollefiallo and I decided to cook up lunch. She is from Ecuador and I'm from the states, so our cuisine and culinary experience are rather different from each other. We went to the grocery store to pick up some ingredients to make an Ecuadorian influenced meal.

We started by making a simple, yet refreshing salad. It consisted of tomato, onion and cucumber chopped up and tossed with lemon juice, salt, pepper and olive oil. It's a great and easy salad for a hot summer day.

Next we made some mashed potatoes. After boiling potatoes, we mashed them up and mixed them with butter and milk to make a smooth and tasty starch to go with our meal.

While @nicollefiallo kept the inside kitchen under control, I went outside onto the back deck to grill up a couple pieces of chicken. Once it's finished it will be mixed with rice. Definitely one of the best parts of the meal!

Below is an Ecuadorian chicken soup that @nicollefiallo made. It had carrots, mushroom, green onions, cilantro, potatoes and noodles mixed in a chicken broth with angel hair noodles. It was hearty and flavorful with a classic chicken soup aroma. This would be perfect in the winter if you are suffering from a cold.

Below is a look at my plate before I got to work. I topped off the potatoes and the chicken with Cholula Green Pepper sauce. It's a spicy, hot sauce made from Jalepeno and Poblano peppers, and it really adds a kick to the dish.

Overall, @nicollefiallo and I were impressed with our lunch yesterday. It filled us up and we had plenty of leftovers. Not to mention, it was much cheaper than going out to a restaurant! I'm sure we will be cooking up some more in the future!
