I am not a bad egg...

Egg friends, this post is for you! And if you aren’t best friends with eggs yet, maybe you’ll be after you read this.

I love eggs. I think they are one of the best foods on this planet. Why do I think that? Well, here are a few of many reasons:

They are healthy:
High in protein (around 7g per egg), contain great fats (no people, dietary cholesterol is not bad for you), full of vitamins and minerals such as iron, vitamin D, and the antioxidants lutein and zeaxanthin.

They are easy to prepare:
Quick breakfast, lunch or dinner, nothing is easier than frying an egg. Add some veggies to it and you got yourself a wholesome meal.

They are versatile:
Eat them as a main, use them as an ingredient and be creative!

Case in point, versatility. I want to share my favorite dishes with you that starr eggs but that go beyond your simple fried, boiled or scrambled options.

Breakfast quesadillas/burritos

I already introduced the breakfast burrito in my previous post, so in case you haven’t seen it yet, go check it out :)

Egg wraps

This is such an easy recipe guys! All you need are 2 ingredients:

  1. Eggs
  2. Psyllium Husk

I usually always have eggs in the house, so when I need a quick meal and don't have any tortillas on hand, this is my go to thing (also great for all low-carbers out there):

-Preheat a pan and mix 1 egg with 1-2 teaspoons psyllium husk, combine well. The mixture should still be runny. Add a teeny tiny amount of butter to the pan (just so the wrap won't stick) and pour the egg mix in. Spread out so it covers the pan like so:

Flip the wrap over once the mixture is set. Let the wrap cool down for a bit and then fill it with whatever your stomach desires :)

Egg muffins
Another very easy and quick recipe, and again, you got total control of what you want to add to the muffins.

An example:
-eggs*
-milk
-mushroom and pepper cut into small pieces
-ham cut into small pieces
-grated cheese
-salt and pepper to taste

*(the amounts vary depending on how many muffins you want to make. I would suggest using 1 egg per 1-2 muffins and 1 tbsp milk per egg)

Now all you need to do is combine the egg and milk well, then add all the other ingredients into the mixture and pour it into a muffin tin, cupcake molds or ramekins. Bake in the oven at 180°C for around 20 minutes or until the egg muffins are set.

Cheesy omelet/almost-pancake

Okay, so this one is pretty much like your average omelet, except that I add psyllium husk to this recipe, in order to add some bite to it. I call it an "almost-pancake" because it resembles a pancake in taste and texture.

So here are the ingredients for one serving:
-2 eggs
-2 tbsp milk
-2 tsp psyllium husk
-a small handful grated cheese
-salt and pepper to taste

And what you'll need to do:
Combine eggs and milk first, then add the psyllium husk and beat well. Season the beaten eggs well with salt and pepper. Heat butter in frying pan over a medium-low heat. Pour the eggs into the pan. Leave the egg mixture until the egg has just about set on top. Now fill the omelet with grated cheese and fold gently in half with a spatula.

Awesome post, eggs are one of the true loves of my life :D

Eggstraordinary taste you have, and eggs aren't eggspensive either so they are an eggcelllent ingredient to make eggsquisite meals with ... okay, I'll stop with this eggscrutiating play on words :D
