Vegetarian Mushroom and Bean Chilli. YUM!

When I posted this on our Kindred Acres facebook page, quite a few people messaged and commented asking for the recipe. Those that have been following us for a while know I don't go by recipes. I'm a 'wing it' kinda gal. I can tell you what I put in and rough estimate....so here it is!!

First, chop your mushrooms. We used oyster and shiitake. Mince some sweet onion, garlic, and sweet pepper. Saute the mushrooms, onions, garlic, and peppers in a pan with butter or oil (we used organic pasture-raised organic salted butter). Set this aside.

In a saucepan add your beans. We used pinto and kidney. Add tomato paste, diced tomatoes, a splash (or two or three) of beer (the alcohol gets cooked off but the flavor...ooo yum), a pinch of cinnamon, a pinch or two of white pepper powder, a few pinches of chili powder, a pinch of cumin, and salt. Add water, and simmer. Add your sauteed mushrooms and veggies and allow to simmer a bit longer. Taste to see if you need to add more spices. Continue to simmer until beans are soft and flavors have blended. Pour into bowls and top with some fresh diced tomatoes 🍅, fresh diced pepper, green onions, shredded cheese (we used Kerry gold Dublin cheddar), a dollop of organic sour cream...yum.
