Greek Zuccini Patties // VEGETARIAN RECIPE
Dear all,
Right now I am traveling and enjoying the summer throughout the clear blue water beaches in Greece and wanted to share another Greek light and fresh recipe with you: Zuccini Patties with Tzatziki!
Ingredients
Greek Zuccini Patties
4 Zuccini
1 karot
2 eggs
bunch of parseley
bunch of Dill
1/2 squeezed lemon
200gr flour (I made it with gluten-free flour)
Salt
Pepper
1 tbsp. Olive oil
Step-to-Step-Guide
- Grate karot and Zuccini‘s in a big bowl and leave it for 10 minutes.
- Take a clean kitchen towel and put the grated vegetables on it. Now close the towel and squeeze it so that the water of the vegetables drops out.
- Now add all ingredients into a big bowl, also the squeezed vegetables and stir it up.
- You can now form with your hands little Patties or cubes and fry it in a hot pan with a little olive oil from both sides.
That’s it!
Duration: ca. 30 Minutes
