Kartoffel Gulasch Eintopf + Recipe (Potato Gulasch Casserole)

Last night, I was thinking of cooking something with potatoes and carrots...there were several choices since I have the ingredients at home. I could make Menudo using the recipe of my Dad or I could make some wedges and spice it hot. Another choice was rosemary garlic roasted potatoes in the oven. But I had some pork chops and the old carrots from the last buying that I wanted to get rid of. I decided to make a version of the Potato Gulasch with a bit more liquid. This is kind of a casserole type. We haven´t eaten this for a long time because it´s more of a winter dish. We´ve been longing for it now and so here is how we are to cook it.

Kartoffel Gulasch Eintopf (Potato Gulasch Casserole)

Ingredients: 4 Servings

2 pork chops with bones cut into pieces ( or liempo - tummy part would also do)
1 pair of hard sausages ( Klobasse, Debreziner)
6 medium size potatoes, peeled, cut into bite pieces
8 big carrots, peeled cut into bite pieces
1 red bell pepper, cut into pieces
a bunch of spring onions, cut into pieces
2 cloves garlic, crushed
soy sauce
4 cups broth or water
sweet paprika powder
1 tablespoon tomato paste
olive oil (or any vegetable oil)
Caraway seeds (optional)
salt and ground black pepper
vegetable broth

Preparations:

1... steam the carrots and the potatoes until half cooked.

2... Marinate the meat with 2 tablespoon soy sauce, spice with pepper and let rest for about 15 minutes. Then in a hot pan with 2 tablespoons oil, stir-fry the meat until all sides are golden brown in color..about 2-3 minutes. Then transfer meat to a platter for later use.

3... In the same pan add 1 tablespoon oil, fry the garlic til golden in color, add the cut spring onions, the bell peppers. Then add the tomato paste and the sweet paprika powder and the caraway seeds (optional). Stir so the spices blend with the vegetables, then add 2 cups broth or water. Let boil then add the meat, the potatoes and carrots and the rest of the broth. Let boil then simmer for about 8 minutes and test whether carrots and potatoes are already soft. Season with salt and pepper according to your taste. Serve hot and enjoy!
