Yesterday I promised you I will write you down a recipe for a simple, but soo delicious Italian dessert called Pannacotta which I used to make a lovely party treat.

To make it you will need the following ingredients:

  • 6 dl of sweet cream
  • 50 g sugar
  • 4leavws of gelatine
  • 1 vanilla bean or 1 vanilla sugar

And for the dressing on top:

  • 200 - 300 g blueberries or other fruits
  • a spoon of powdered sugar
  • half of the vanilla sugar

The process follows:

Soak gelatin, and leave for 10 minutes to swell. Then half the cream should be cooked, when still warm you have to add sugar and vanilla sugar, and cook for another 2-3 minutes. Add the gelatin, and stir till gelatin dissolves. Cool to lukewarm.

In the meantime, the remaining cream has to be whipped and gently mixed with a chilled lukewarm mixture. Models have to be sprayed with water, but they can also be lightly coated with edible oil, and then you need to pour the liquid. Place in the cold for 1 - 2 hours in order to cool down the dessert.

Coating:

Blueberries (frozen or fresh) have to be heated in a microwave oven or on a stove, sugar and vanilla sugar are added, we can save them, then add some fresh, or leave just as much.

We need to rub the tins to enable Pannacottas to remove them from the models and pour over with a cold overflow. Give it a go...You won't be sorry.
