A Fresh Batch of the Most Delicious (and healthy!) Muesli in the World!

I'm sharing this recipe for healthy, tasty home-made muesli because it's just too good not to!

It's healthy, really quick and easy to make, and sooooooo tasty!!

You can, of course, adjust it to your own taste.

Ingredients:
Note: The quantities depend on your taste. If in doubt, go with less - and you can always add more if you find you'd like to.

  • Rolled oats
  • Coconut oil
  • A variety of nuts - I use: sliced almonds; chopped hazelnuts; walnuts; macadamia nuts; chopped pecans; and cashews
  • Sunflower seeds
  • Himalayan Mountain salt (also known as "pink salt")
  • Chia seeds
  • Hemp seeds
  • Goji berries (or dried cranberries)
  • Dried, chopped dates (I don't always use these, but they're a really nice addition)
  • Cacao nibs
  • Milled flax seed

I buy all of the above at Aldi, except for the cacao nibs, which I order from Amazon.

Preparation:

  1. Heat the oven to 450 degrees Fahrenheit
  2. Spread the oats on a baking tray (use as much as you would like to end up with)
  3. Place the tray of oats in the oven for 5 minutes
  4. Remove the tray, and add the salt (to taste - I use quite a lot, but you might want to start with just a little - you can, of course, add more later if you need to)
  5. Add the nuts, sunflower seeds, cacao nibs, and several table-spoons of coconut oil (again - quantity will depend on how much you're making, and taste)
  6. Return tray to the oven, and set timer for 5 minutes
  7. Check the muesli after 5 minutes - you may like to put it back in for a bit longer, if you like a "toastier" flavour, as we do :)
  8. Remove tray from the oven, and add the chia seeds, hemp seeds, berries, dates
  9. Mix it to allow even distribution of ingredients, and allow to cool.

The milled flax seed, we keep in the freezer, and add a spoonful to our bowls when we serve the muesli - to help maintain the nutritional value of the flax.

Serve with a spoon of the milled flax seed, and add coconut milk, almond milk, hemp milk - or whatever milk you like, or yogurt - or eat it dry.

We also keep a box of fresh blueberries in the freezer and add those (they also make fabulous snacks on their own), and of course, you can add banana or anything else that takes your fancy!

What Makes This Muesli Delicious:

  1. The toasting! Toasting the oats and nuts
  2. The pink salt
  3. The coconut oil
  4. The variety
