Easy Beetroot and Feta Salad
Really am into the beetroot at the moment and this is one of my favorite salads I am eating a lot of right now.
Very easy to make using the following ingredients:
2 medium or 1 large raw beetroot
Hand full of rocket
Roasted pumpkin seeds
Feta cheese
2 tablespoon of balsamic vinegar
2 tablespoon of extra virgin olive oil
1 teaspoon of Dijon mustard
1 tablespoon of honey
To make the dressing simply mix the balsamic vinegar, olive oil, mustard and honey in a jar and give it a shake. Season to your taste with some salt and pepper.
For the salad first roast the pumpkin seeds lightly is a pan until you hear them popping. Then put aside to cool.
Slice the beetroot into thin sticks and put in a bowl with the rocket. Add the dressing and give it a toss, then add the pumpkin seeds and crumble the feta on top.
Very easy to make and delicious as a main salad meal or side dish with meat or fish. Try it and let me know what you think.
