Potato Spinach Frittata
If you want a satisfying vegetable meal, this recipe is a quick and easy go to for you. I saw this online and made a few minor modifications to fit the ingredients I have home.
Ingredients:
8 pcs beaten eggs
1pc big potato
Half of a red bell pepper
Thinly sliced onion
2 cloves minced garlic
1/4 butter
2-3 pcs thinly sliced sweet basil
2 cups spinach
1/4 cup olive oil
Salt & pepper
How to cook
Boil the potato until cooked. I wasn't able to time this accurately because I just turned on the stove then went on and did my daily workout routine. But more or less it should be done in 30 minutes.
Peel and slice as thinly as you can.
Heat pan and put olive oil in.
Sautee onion, garlic and bell pepper.
Add in spinach. Cook until they are wilted. Spread evenly in the pan.
Add in butter. Butter tends to burn easily so we should add this once the veggies are all cooked.
Add salt & pepper. Lower the fire to the lowest setting.
Put the beaten eggs. Make sure to spread the vegetables evenly. Add salt & pepper as needed. Cover the pan. Wait until the egg has settled. This should take roughly 20 minutes.
And there you have it! You can eat it with rice. Filipinos always eat rice on almost every meal. But because of the potato in it, it's a complete meal by itself. You can dip it in tomato catsup too.
