Recipe Chicken Kabsah Typical Cuisine of Saudi Arabia
Ingredients
- 1 kg of Basmati Rice
- to taste Raisin
- 2 chickens
- 3 tbsp of Olive Oil
- 1 clove Onion Bombay
- 5 Garlic cloves
- 3 cm Ginger
- 1 tbsp White Cumin Powder
- 1 tbsp Coriander Powder
- 1 tsp Turmeric Powder
- 1 tsp Black Pepper Powder
- 1 tbsp Cardamom
- 8 cloves
- 2 pieces of Cinnamon
- 2 ripe Tomatoes
- to taste Tomato sauce
- 1 piece Maggi
- 2 tbsp Salt
- Optional for smoke fragrance
- to taste aluminum foil
- 1 tbsp of cooking oil
- 1 piece of charcoal
Steps
Basmati rice washed and soaked for about 30 minutes before cooking.
Heat 3 tbsp of olive oil into the pan. Onion and garlic in finely chopped, then in stir fry after the scent reduce the fire.
Put all cumin, coriander, turmeric, black pepper, cardamom, cloves, cinnamon, finely chopped ginger and add salt. And also enter the sliced tomato, can add a little tomato sauce and maggi blocks.
Once smell wanhi fragrant add a little water and enter whole chicken stir well, after the chicken change color add water (5 cups) approximately enough to cook rice.
After the chicken meat looks tender lift and set aside.
Enter the previously soaked Basmati rice until cooked and then steam.
Prepare the aluminum foil molded box container then filled with 1 tbsp cooking oil. Heat the charcoal until it burns.
Make a hole in the middle of steamed or cooked rice and place the aluminum foil with oil and then enter the burning charcoal, close the pan or steamer.
Chicken is prepared and in a separate grill until it looks a bit brownish.
Raise Rice and Chicken Kabsah ready to serve.
