Once Again my favorite Mood Lifting Pasta

CHICKEN PASTA WITH CREAMY SAUCE.
Ingredients:
9 oz whole grain pasta
1/2 cup chicken broth
10 oz large chicken breast boiled and chopped into cubes
1 cup chickpeas boiled
1/2 cup mushroom (chopped)
1 cup white sauce (recipe mentioned below)
2 tbsp butter
3 cloves garlic (finely chopped)
2 tbsp parsley (chopped)
2 green chilies finely chopped
1 cup low fat cheddar coarse shredded
olive oil (as required)
pepper (as required)
salt (as required)

White Sauce
Combine 2 cups (500 ml / 17 fl oz) organic coconut milk with 80 – 100 g raw cashew nuts or macadamias into a high performance blender. Blend until smooth and creamy and use as required. Season to taste.

Cook pasta as per the instructions specified in the packet. After draining drizzle olive oil to prevent sticking.

In another pan add butter, as it melts add 1 tbsp oil, chopped garlic. Saute on low heat and add green chilies, continue till garlic starts to change color; add chickpeas and mushrooms. Season with pepper and salt. Close the lid and cook for 2 minutes.
Add the cooked chicken pieces and mix in white sauce. Add pasta, 1/2 the cheese and chicken broth.

Bring to simmer by cooking in low heat till the sauce starts thickening. Empty into a large serving bowl.
Garnish with chopped fresh parsley leaves and cheese.
