Underrated dishes which are best sellers #5.1 The Wrap Part One- Raw Veggies

The variations of Wraps in the global cuisine are so many and ALL are very popular. Though they differ vastly in the look and presentation the basic element defining this dish is Flat Bread
Except for the tortilla which is traditionally a wrap all others have evolved over the last couple of centuries to be used as the base for the Wrap.
The annual global wheat production exceeds 3000 million Metric tons. Though there is no empirical data, chefs and hoteliers estimate that as much as 15-20% of the wheat flour is used for Fast Food; a major portion of Fast Food is the Wrap.
To give the Wrap it's due I have split my post into 3 parts

  • One: Raw Vegetable wrap
  • Two: Cooked Veggie wrap
  • Three: Shawarma
    It is difficult to leave out other meat wraps of the Mexican and Malaysian cuisine. But Shawarma has been gaining increasing market share in the last few decades, all over the world.
    To start off; there are a variety of flat breads which are popular and now increasingly available packaged and ready to use:

Tortilla = a flat bread made from maize flour or wheat flour or a combination (Popular in Americas)
Lavash = a flat bread made from wheat flour, sometimes local flavorings like herbs and sesame are added. (Popular from Turkey across central Europe till Armenia)
Roti = a flat bread made from refined wheat flour or whole wheat flour or a combination (Indian subcontinent)
Roti Canai = a flat bread made from refined wheat flour and addition of oil/fat when kneading (South East Asia)
Kita/Pita= a flat bread made from a combination of wheat flour and barely flour. It may be leavened ( puffed up and pocket can be sliced open) or flat. (Africa and Mediterranean)

There could be a million recipes out there for a fresh veggie wrap- And you can even make one. Say take 4-5 veggies you can eat raw like tomato, cucumber, lettuce, sprouts, carrot, beet, etc put the m on a flat bread; add salt, vinegar, olive oil maybe, sour cream or cream cheese or hung curd or mayo or salad dressing or a sauce maybe, And wrap - its done.
