[DISTILLERY] Resurrection of Irish Whiskey in Dublin, Teeling Whiskey

Short History of Irish Whiskey

Happy (belated) St. Patrick's Day! Even though St. Patrick's Day has turned in to an event where the whole purpose is to drink and get drunk, it holds quite a lot of cultural importance in the history of whisk(e)y. It is believed that Irish monks were the first ones who brought distilling to Ireland around 1,000 A.D. and started to make Water of Life. Later, these Irish monks moved to Scotland with their distilling techniques in an attempt to flee the pirates, starting the history of Scotch Whisky as well. So you can see why I said St. Patrick is important for whisk(e)y drinkers.

Irish whiskey was at one point, the World's largest whiskey-producing region. However, with the events that unfold one after another, this soon became a glory of the past and handed their crown to Scotch Whisky. The first was the introduction of Coffey still which led to the development of cheaper grain whisky that led to the birth of blended whisky. This was seen more favourable from Britain, due to its smooth taste, but Irish distillers were reluctant to adopt the method, unlike Scotch distillers. The Irish War of Independence in the early 20th century, prohibited Irish from exporting their whiskey to the Britain and Commonwealth nations, and finally, the prohibition in the United States all took part in fall of Irish Whiskey industry. However, with the overall demand for whisky growing globally, Irish Whiskey is also starting to experience a resurgence, with new distilleries opening every year. So in the memory of St. Paddy, I'm going to introduce one of the rapidly growing Irish whiskey distillery, Teeling Whiskey.

아이리쉬 위스키의 역사

해피 (매우 늦은) 성 패트릭 데이! 한국에서는 아직 낯설고, 외국에서는 술을 마시고 취하는 축제로 바뀐 성 패트릭 데이지만 위스키의 역사에 있어 성 패트릭은 꽤나 중요한 인물입니다. 아일랜드에 처음으로 카톨릭을 전파한 인물로 아일랜드 카톨릭 교회에서 가장 존경받는 성인인데요, 아일랜드에 증류기법을 소개한 이들도 바로 아일랜드 수도승이라는 설이 가장 유력합니다. 기원후 1000년 즈음 지중해 지역에 널리 퍼졌던 향수 증류기법을 들여와 사람이 마실 수 있는 생명의 물 을 증류하였고, 이후에 해적을 피해 스코틀랜드로 자리를 옮기며 아일랜드 수도승이 가져온 증류기법을 통해 스카치 위스키의 역사가 시작되었다고 합니다. 제가 왜 위스키 애호가들에게 성 패트릭이 중요한 인물이라고 했는지 이제 아실겁니다.

아이리쉬 위스키는 한 때 세계에서 가장 많이 팔리던 위스키였습니다. 하지만 여러가지 악재가 겹치며 결국 스카치 위스키에게 이 왕좌를 물려줘야만 했습니다. 첫 번째는 커피 스틸(Coffey Still)의 발명으로, 어니어스 커피라는 사람이 발명한 연속식 증류기입니다. 기존의 팟스틸에 비해서 훨씬 저렴하게 위스키를 만들 수 있다는 장점이 있었고, 이를 활용해 만든 그레인 위스키는 블렌디드 위스키의 탄생으로 이어졌죠. 블렌디드 위스키는 그 부드러운 맛에 영국 사람들의 사랑을 받았지만, 스코틀랜드의 증류소와 달리 아이리쉬의 증류소는 이 새로운 기술을 받아들이기를 거부하였습니다. 20세기 초에 이뤄진 아일랜드 독립 전쟁은 아이리쉬 위스키의 가장 큰 시장이었던 영연방의 모든 국가로의 수출이 제한되었고, 이와 함께 미국의 금주령으로 미국의 시장 또한 하룻밤 사이에 사라지며 아이리쉬 위스키의 몰락에 한 몫을 하였습니다. 하지만 최근 들어 전 세계적인 위스키 수요가 급격히 늘어나며 아이리쉬 위스키 또한 새로이 부활 하고 있으며, 매해 새로운 증류소들이 문을 열고 있는 추세입니다. 비록 늦었지만 성 패트릭을 기리며 아일랜드의 새로운 증류소이며 급속도로 성장 중인 틸링 위스키 증류소를 소개하려 합니다.

Teeling Whiskey

When Teeling distillery opened its door in 2015, it was the first new distillery to open its door in Dublin in 125 years. The Teeling family previously owned Cooley and Kilbeggan distillery, both sold to Beam Suntory in 2011. Teeling Distillery has been releasing a number of matured whiskies since they first opened their door, and this was possible because of the stock from Cooley distillery. Newly built, the distillery has taken visitor tour centre into consideration while designing, and it could be seen from cafe located on the first floor as well as the waiting area for tourists, where tourists can follow the history of Irish Whiskey.

틸링 위스키 증류소

2015년에 처음 문을 열었을 때 틸링 증류소는 125년만에 더블린에 새로이 문을 연 증류소가 되었습니다. 틸링 가문은 이전에 쿨리 증류소와 킬베간 증류소를 소유하였으나 2011년 빔 선토리에 판매를 하고는 새로이 가문의 이름을 딴 증류소를 열었죠. 틸링 위스키는 새로이 문을 열자마자 다양한 고숙성 위스키를 선보였었는데 이는 틸링 가문이 보유하고 있던 쿨리 증류소의 재고 덕분입니다. 새로이 지어져서인지 증류소는 단순히 생산시설의 기능 뿐만 아니라 방문객을 위한 편의 시설도 고려에 두고 있는데요, 1층의 카페와 아이리쉬 위스키의 역사를 살펴볼 수 있는 대기 공간이 이러한 부분이죠.

Compared to Scotch whisky, which is under strict regulation, Ireland has a more lenient law that defines what Irish Whiskey is. Traditionally, Irish whiskey was triple distilled, showing very smooth characteristic compared to the double distillation of Scotch Whisky. Teeling distillery tries to maintain tradition by applying triple distillation with three pot stills from Italy. They also use two wooden washbacks with four other stainless ones, so that tourists can see the traditional process. It is widely accepted amongst distillers material for washbacks is irrelevant. (I will discuss the detailed process of distilling later.)

스카치 위스키 규정으로 인해 엄격히 통제되고 있는 스카치 위스키와 달리 아일랜드에서는 아이리쉬 위스키를 좀 더 느슨하게 규정하고 있습니다. 전통적으로 아이리쉬 위스키는 세 번의 증류를 거치는데, 이는 두 번의 증류만 하는 스카치 위스키에 비해 좀 더 부드러운 맛을 보여줍니다. 틸링 증류소는 아이리쉬 위스키의 전통을 유지하기 위해 다양한 노력을 하는데, 그 중 하나가 바로 이태리에서 들여온 세 개의 증류기를 통한 세 번의 증류 과정입니다. 틸링에서는 전통적인 방식을 보여주기 위해 두 개의 소나무로 된 워시백과 네 개의 스테인리스 스틸을 활용한 워시백을 사용 중입니다. 현재 알려진 바로는 다른 종류의 위시백 사용이 위스키의 맛에 끼치는 영향은 미미하다고 합니다. (위스키 증류의 세부적 단계에 대한 내용은 따로 다루도록 하겠습니다.)

More lenient regulation of Irish Whiskey allowed distillers to try new and innovative approaches in the making of their whiskey. Recently, there has been a dispute between Diageo and Scotch Whisky Association (SWA) regarding the usage of Tequila cask in the maturation of Scotch whisky. SWA overruled the proposition, but during the tour, the tour guide told us that Teeling has been experimenting with Tequila cask and many other casks since they are not under the strict restriction of Scotch Whisky Regulation. Teeling's three core whiskies also show innovative experiments Teeling Distillery is doing.

Among the three tours that visitors can choose from, Regular tour, Teeling Trinity Tasting tour, and Luxury tour, I've chosen Teeling Trinity Tasting tour which ends with the tasting of three main products of Teeling Whiskey: Small Batch, Single Grain and Single Malt. All three were very unique and interesting in its style.

Teeling Small Batch Whiskey was first matured in mostly Bourbon cask and finished in Rum cask, giving it a sweet taste as well as a variety of refreshing notes, such as lemon, apple, herb and cinnamon.
Teeling Single Grain Whiskey is one of the few Irish grain whiskey in the market, and it stands out even further by using California Cabernet Sauvignon cask. It has a mixed flavour of spicy and fruity, including red grape, sweet syrup, spice, vanilla and buttery feeling on the tongue.
Teeling Single Malt Whiskey is a peak of Teeling's innovative trials, combining whiskies that have been cask finished in sherry, port, Madeira, white Burgundy and Cabernet Sauvignon. This gives the whiskey unique grape juice nose. On the palate, it shows a very complicated mixture of fruit, followed by spiciness. This was superb.

이미 언급하였듯이 아이리쉬 위스키의 상대적으로 유연한 규정은 아이리쉬 위스키를 만드는데 있어 더 많은 창의적인 접근을 가능케 합니다. 최근 디아지오와 스카치 위스키 협회 사이에서 스카치 위스키를 숙성하는데 있어 데킬라 캐스크의 사용을 두고 분쟁이 있었습니다. 결국 스카치 위스키 협회에서 승인을 하지 않았었는데, 틸링 위스키 투어를 하는 도중에 투어 가이드가 다양한 캐스크를 활용한 시도 중에 있으며 그 중 데킬라 캐스크도 있다는 언급을 하더군요. 이러한 틸링의 창의적인 도전정신은 그들의 세 가지 코어 위스키에서도 살펴볼 수 있습니다.

틸링에는 방문객이 선택할 수 있는 세 가지 투어가 있는데 바로 기본적인 투어와 틸링 트리니티 테이스팅 투어, 그리고 럭셔리 투어가 있습니다. 그 중에서 틸링 트리니티 테이스팅 투어를 선택하였는데, 증류소 투어가 끝난 뒤에 틸링의 세 가지 메인 위스키인 스몰 배치, 싱글 그레인, 그리고 싱글 몰트 위스키를 맛볼 수 있는 투어로 세 가지 모두 굉장히 독특하고 인상적인 모습을 보여줬습니다.

틸링 스몰 배치 위스키는 대부분 버번 캐스크에서 숙성을 시킨 뒤 럼 캐스크에서 숙성을 마친 블렌디드 위스키입니다. 럼 캐스크 피니쉬는 달큰한 맛과 함께 레몬과 사과, 허브와 시나몬과 같은 산뜻한 맛을 보여줍니다.
틸링 싱글 그레인 위스키 는 흔치 않은 아이리쉬 그레인 위스키로 캘리포니아산 카베르네 소비뇽 캐스크에 숙성을 시켜 독특함을 더합니다. 향신료와 과일의 향이 혼재되어 있으며 적포도, 달콤한 시럽, 향신료, 바닐라와 버터와 같은 느낌을 주기도 합니다.
틸링 싱글 몰트 위스키는 틸링의 창의적 도전 정신의 정점에 있는 위스키로 쉐리와 포트, 마데이라, 화이트 버건디 그리고 카베르네 소비뇽 캐스크 피니쉬를 한 몰트 위스키를 블렌딩한 것입니다. 이러한 시도는 독특한 포도 주스와 같은 향을 내는 동시에 입안에서는 과일의 복합적인 맛을 뽐내고, 그 뒤를 이어 향신료의 스파이시함을 느낄 수 있는 매력적인 위스키입니다.

Just like any other tours, tour ends with a gift shop. In Teeling Distillery gift shop, there are quite a few whiskies that are no longer able to acquire outside of Ireland, so if anyone's interested, it is highly recommended to check the place. They also have hand filling whisky that is exclusive to the distillery which is quite interesting.

Many people tend to visit Jameson when they travel to Dublin. However, Jameson Distillery is currently located in Midleton, and one in Dublin is simply a Visitor Centre. If you want to see the real distillery and distillation happening within Dublin, I highly recommend visiting Teeling Whiskey Distillery.

더블린에 여행을 온 많은 사람들이 대부분 아이리쉬 위스키에 대해 배우기 위해 제임슨을 찾습니다. 하지만 현재 제임슨 증류소는 미들턴에 자리를 잡고 있으며 더블린에 있는 것은 관광 센터에 불과합니다. 그렇기에 만일 더블린에서 아이리쉬 위스키가 만들어지고 있는 실제 증류소를 살펴보고 싶다면 틸링 위스키 증류소를 적극 추천합니다.
