Hello and welcome to another Steemit post from Simple Recipes. Today I will be writing about my take on the Baked Vegetable omelette. A favorite recipe of mine that I like to share with family and friends for breakfast or brunch. I hope you enjoy.


Ingredients

  • 10 eggs
  • 1 tablespoon vinegar
  • 1/4 cup milk
  • 3 tablespoons oil
  • 1 cup cauliflower small diced
  • 2 zucchini shredded 
  • 2 scallions chopped
  • 1/2 hot green pepper small diced
  • 1 red bell pepper small diced
  • 1 green bell pepper small diced
  • 2 cups of parsley chopped
  • half cup of cilantro chopped
  • 1 tablespoon dill
  • 5 tablespoons of flour
  • 1 teaspoon dried coriander
  • 1 teaspoon of each salt, black pepper, paprika, cajun.
  • 1/2 teaspoon of cinnamon powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon of baking soda


Tahini Sauce

  •  1/3 cup Tahina
  •  3 tablespoon yogurt 
  • 1 tablespoon crushed garlic
  • 1 tablespoon vinegar
  • Salt,Pepper, Paprika, Cumin. (Adjust to taste) 

Method

  1. Preheat the oven to 200

  3. Mix all vegetables together.

  5. Mix eggs with vinegar, milk.
  6. Mix the flour with baking powder and baking soda.
  7. In a big bowl mix all the ingredients mentioned in the above steps together and add the seasoning.

  9. Coat the inside of a baking pan with oil add the egg and vegetable mixture then bake for 20 minutes or until its cooked. ( Use a knife to check if its cooked by inserting it into the omelette if theirs no residue on the knife after you remove it then its fully cooked)

 For the Tahini sauce, combine all the ingredients mentioned earlier and mix it very thoroughly.

Serve the omelette with tahini sauce and pita bread.
