Sultana coffee cookies (original recipe)

Ingredients

100 g dark brown sugar
40 g vanilla sugar
1 tsp instant coffee
1 tsp vanilla essence
1 egg
75 g butter, softened
100 g sultanas, chopped
175 g self-raising flour

Method

1. Combine the ingredients except for the sultanas in a large bowl. Mix together well. Fold in the sultanas.
2. Line a baking tray with baking paper and shape the dough into 20 balls. Flatten.
3. Bake in preheated oven at 170 degrees fan forced for 10 min or until golden brown.
