HONEY MUSTARD CHICKEN


Ingredients

  • 4 chicken thighs
  • 1 large red onion, diced
  • 250g diced sweet potato
  • 250g diced red potato
  • 150g chopped carrots
  • 350g chopped green beans
  • 100g of quartered Brussel sprout
  • 1/4 cup honey
  • 1/4 cup mustard
  • 5 minced garlic cloves
  • 1 tablespoon chopped rosemary
  • 1/2 tablespoon dried thyme
  • 1/4 teaspoon pepper
  • salt
  • pepper
  • olive oil

The steps

  1. Preheat oven to 200C.
  2. In a baking tray with parchment paper, place red onions, carrots, red potato, green beans, Brussel sprouts and sweet potato in separate piles.
  3. Season each vegetable with olive oil, pepper, salt, rosemary and thyme. Make sure all are coated with the seasonings, then spread all of the vegetables flat on the baking tray. Keep each vegetable separate, then set aside.
  4. Combine honey, garlic, mustard, salt and pepper in a small bowl and whisk well. Set aside.
  5. In a greased cast-iron skillet, place the chicken thighs.
  6. Season each thigh with pepper and salt on both sides. Then, brush each with the honey-mustard sauce on both sides, too.
  7. Bake the chicken and vegetables on separate racks.
  8. Bake the chicken until the skin is crispy. Remove the vegetables from oven once cooked.
  9. Serve and Enjoy!
