POTATO CURRY
Ingredients
- 1kg potato, peeled and cubed
- 250ml vegetable broth
- 2 tablespoons vegetable oil
- 1 diced yellow onion
- 5 minced garlic cloves
- 1 1/2 tablespoons curry powder
- 1 3/4 teaspoons paprika
- 1 1/4 teaspoon cayenne
- 2 1/4 teaspoons cumin powder
- 3/4 teaspoon allspice
- 2 1/4 teaspoons minced ginger
- 3/4 teaspoon black pepper
- 1 can drained chickpeas
- 2 tablespoons canola oil
- 1 tablespoon lemon juice
- 1 can diced tomato
- 1 can coconut milk
The steps
- In a large pot, heat the oil over medium heat.
- Add the onion and saute for 3 minutes.
- Add garlic and saute until it becomes fragrant.
- Add the curry powder, cayenne, paprika, cumin, ginger, salt, all spice and pepper. Stir until all the spices are fragrant.
- Add potatoes and mix well.
- Add the chickpeas and stir.
- Add the vegetable broth, lemon juice and tomatoes. Stir, then add coconut milk and stir again.
- Increase heat to high. Bring to simmer, then reduce heat to medium.
- Cook until potatoes are tender.
