Chicken Tortilla Bowl Soup
Ingredients
- 1 diced jalapeno
- 1 diced onion
- 1 can of drained corn
- 2 large chicken breasts
- 3 cups chicken stock
- 1 can of drained black beans
- 1 teaspoon salt
- 1 can diced tomato
- 1 teaspoon cumin
- 1/2 teaspoon ground pepper
- 1/2 teaspoon oregano
- 1 can red enchilada sauce
- chopped garlic
- oil
- 1 pack large flour tortilla
- Avocado slices
- Cheese
- Cilantro
TOPPINGS (OPTIONAL) :
Preparation
- Put jalapeno, onion and garlic in the bottom of slow cooker.
- Put the chicken on top of it.
- Add black beans, diced tomatoes, corn, enchilada sauce, oregano, salt, pepper, cumin and chicken stock.
- Cook for 3 hours in high heat.
- When it's done, remove the chicken and cut it into small cubes. Put back the chicken pieces to the soup.
- Heat a large pot with vegetable oil up to 350F. Make sure that you fill the pot with almost half or more vegetable oil for deep fry.
- Place the torilla on oil and gently press it down with a ladle. Fry until golden brown and drain it on a rack.
- Place the fried tortilla bowl in a soup bowl and fill with the chicken soup.
- Add some toppings if you want.
