GRILLED CITRUS SALMON AND ASPARAGUS
Ingredients
- 4 salmon fillets
- salt
- pepper
- 5 cloves garlic, minced
- 1/2 cup olive oil
- 2 sprigs of rosemary for marinade
- 4 sprigs of rosemary for grilling
- 2 lbs asparagus
- 2 sprig thyme
- 2 juiced lemons
- 3 sliced lemons
The steps
- Put salmon, olive oil, salt, pepper, minced garlic, 2 thyme sprigs, 2 rosemary sprigs and juice of two lemons in a resealable bag.
- Seal and mix the marinade gently. Refrigerate and marinate for one hour.
- Preheat half of the grill to medium high heat for indirect grilling.
- Slice the remaining lemon horizontally. Make sure you make six to eight slices per lemon.
- Cut each piece of asparagus into half.
- Put oil on the grill with olive oil.
- Line the lemons on the half of the grill that is not hot. Place the salmon on top of the lemon slices, topping it with rosemary sprig on each fillet.
- Cover and grill for 20 minutes.
- Put all the asparagus spears on the grill, brushing them with olive oil, then grill again for 5 minutes.
- Serve and Enjoy!
