A Light (and Late!) Lunch
I've had a black of tofu in my fridge for the last few days, meaning to try and find a new recipe to use it in. Instead, today, I pulled out my griddle, cubed the tofu, and added some frozen spinach. A little chili powder, a little garlic, a sprinkle of sea salt and, well, hello there, lunch, how you doin'? Quick, filling, and immensely satisfying for my palate and belly. (Not shown: the iced tea I'm drinking with it.) What are you eating?
