CHOOSE YOUTH: BEST SUMMER RECIPES

In the summer markets there is a young potato, which can become the basis for win-win dishes, wrote down some interesting recipes.

Baked young potatoes
Ingredients: 1 kg of potatoes, 4 tbsp vegetable oil, 1-2 tsp mustard, 3-4 cloves garlic, 1⁄2 lemon, a pinch of Basil, oregano and rosemary (you can take fresh), 1⁄2 tsp paprika, salt, a little red hot pepper.
Method of preparation: mix in a large deep bowl vegetable oil, mustard, garlic passed through the press, lemon juice, paprika and dried herbs. Potatoes should be washed thoroughly, no need to clean. Cut into 4 parts (if a large tuber, interesting recipes, then 8). Potatoes lower in a fragrant mixture, mix well. Add salt and pepper a little. Mix again. Lay the baking sheet with baking paper or foil. Put the potatoes in one layer (otherwise it will not be baked). Preheat oven to 180 degrees. Bake until Golden brown for about 40 minutes. Several times the potatoes need to be prevented.
Tip: for this dish it is better to take small tubers of approximately the same size.

Hash browns
Ingredients: 5 potatoes, 1 onion, 2 tbsp starch, 1 egg, 70 g soft cheese, vegetable oil. For sauce: 250 ml sour cream, dill, 1-2 cloves of garlic, salt.
Method of preparation: peel potatoes and grate with onion. Drain excess juice. Add egg, salt, starch, cheese. Stir. Fry on both sides in oil until Golden brown. Serve with sour cream sauce. To do this, salt the sour cream, squeeze out the garlic and add finely chopped dill. Stir.
Tip: these pancakes are perfect salted red fish.

Mashed soup with garlic croutons
ingredients: 8 young potatoes, 2 onions, 1 liter of broth (or water), 2 tsp mustard seeds, vegetable oil, 300 g of soft cream cheese, a small bunch of green onions. For croutons: 300 g of white bread, 2-3 cloves of garlic, vegetable oil.
Method of preparation: chop onions and fry in oil until Golden in a pan with a thick bottom. Add diced potatoes, mustard seeds. Fry. Add broth and cook until potatoes are ready. Using a blender to turn the soup into a puree. Add cheese. Stir. Sprinkle with chopped green onions. Serve with garlic croutons. To do this, cut the white bread into cubes, pour olive oil and add the garlic passed through the press. Stir and fry in a dry pan until crust.
Tip: to toast perfectly suited to yesterday's baguette eliability.
