Pasta with spinach

Bright green homemade pasta with useful and nutritious spinach. They can be cooked all together, having arranged from the dinner a real culinary family team building.

Ingredients

• 200 g of spinach;
• 300 g of sifted flour;
• 1 liter of salted water;
• 2 tablespoons of olive oil;
• 4 cloves of garlic;
• ¹/₄ teaspoon ground chili pepper;
• 200 g of young courgettes;
• 300 g of cherry tomatoes on a branch;
• 50 g of peeled pine nuts;
• ¹/₂ bunch of basil;
• 50 grams of grated parmesan cheese;
• olive oil for serving.
  
  

Preparation

Grind the spinach and flour in the food processor until the dough turns out. Make sure the dough does not stick to your hands. If you still stick, add a little more flour.

Pasta macaroni do this: pinch the dough into a slice of such size that each of them could roll a ball about 2 cm in diameter. Roll the balls into long thin sausages. In this you can help children, if they are also involved in the preparation of dinner. Pichi can be cooked immediately, and you can let them dry for a few hours - do what you want.

Bring the water to a boil. At the same time, put on a medium fire a large deep frying pan with 2 tablespoons of olive oil. When the oil warms up, add to it a peeled and finely chopped garlic and sprinkle with chili pepper.

Finely chop and put the marrow in a pan. Tomatoes free from greens, rinse under running water, cut into halves and also send to a frying pan. Cook the vegetables for 5 minutes, then stir, add cedar nuts and pour 200 ml of boiling water from the pan. Cover the frying pan with a lid and allow to soak on low heat while you are cooking piche.

Pour the sausages into a pan with the remaining water and cook until ready - about 8-10 minutes. Drain the water, reserving 50-100 ml in a separate glass.

Ready to add to the frying pan with vegetables.

Cut the basil roughly and also send it to the frying pan, leaving a few leaves for the powder.

Sprinkle the contents of the pan with grated Parmesan, cover with a lid and shake well to allow the contents to mix. If the dish is dry, add the reserved water.

Serve on large plates, sprinkled with olive oil and sprinkled with basil.
