Today we will visit one of the best places for food-lovers in Ipoh (Malaysia)! Restaurant Hainam for almost 20 years serves the best chicken in the city! Find out why it is so unique!



The restaurant took its name from one of China's regions, from which comes the wife of the owner. The region is famous for the fantastic chicken with rice. It is commonly known as Hainam-style chicken.


Before I show you how it is prepared, I will take you for short walk around this place. I had the opportunity to visit it just before the opening, so I could record all the interesting corners.

The kitchen in the restaurant is quite big and its ergonomy is very well designed. Everyone has their own corner and easily carries out their tasks.



In Hainam you will find a place for many fans of good chicken! There is also a spot where you can see how "the star" is cut.



For special guests you will find here a separate, closed room in which you can have a private dinner or a business meeting. I was lucky to get the invitation to this room from the owner.

On the wall you will find an article that appeared in the newspaper on the day when the restaurant was opened. It is framed in an honorable place and reminds that Hainam has been preparing traditional and delicious dishes for almost 20 years.



Hainam chicken owes its unique taste to the preparation process. It is picked up from feathers, cleaned, washed and then dried in the wind for one day.



This gives the meat its unique taste and consistency. The whole chicken is marinated only in soya sauce and oil. Then, a secret mixture of herbs and vegetables goes inside. At the end the bird is slowly roasted for one hour. During the roasting it gains a distinct and delicate taste and the skin, which is slightly browned, simply tastes amazing!

Ready chicken goes under the Master's chopper and is cut and served with bones, which gives him even more flavour. The chef takes care only about cutting the chickens and placing them on the plate. Watch what skill level he has reached over the years.



The second type of chicken served in Hainam is steamed chicken.



It has such a delicate texture that it simply melts in your mouth! It skin, under the influence of hot steam, becomes delicate, firm and has a wonderful, deep taste. It fits amazing with sauce prepared on the base of chilli and ginger. Its addition takes the whole dish to higher level!

Both types of chicken are served here with rice prepared in the Hainam-style. It has much more flavour than traditional white rice. This is a result of the addition of lemon grass and ginger. It is light, fresh and perfectly fits the chicken.



A vegetable addition is cabbage, which is shortly cooked and seasoned only with soy sauce and oil. It is sprinkled on top with a heavily fryed onion, which twists its flavours and is a pleasant surprise.


Although "Hainam" specializes in chicken, you can also try here the fantastic tofu with fish cake! This dish is steamed, so it has a unique, light consistency. It's so delicate that the best analogy that comes to my mind is the pudding - you can only eat it with a spoon! A tofu prepared this way simply melts in your mouth!





The visit in Hainam inspired me to experiment with chicken and showed me that even such a popular meat can be prepared with a bit of ingenuity in a totally unique way.
