Lentil soup accompanied with salty fish and olives. A food full of vitamins
In Greece sometimes, if someone is daring, accompanies this soup with raw onion or raw garlic. Seriously, you have to have courage!!!
This is a nice dish if you want to eat a food rich in iron. Also, salted fish gives you a good dose of omega-3 ingredients.
So here it is!
Ingredients: 500gr of lentils, 1 medium onion chopped, 2 tbsp tomato paste, 2 bay leaves, 500gr tomato juice, salt to taste, pepper to taste, 1 tbsp of dried oregano, 2 chopped gloves of garlic. While cooking you may add some olive oil; I didn’t. Also, when you serve you might add optionally 1 tbsp of olive oil (I didn’t) and ½ tbsp of grapes mature vinegar
In a deep pot I first boiled some water covering until the mid of the pot. I poured the lentils and let them boil for 10’. Then I drain them and bring them back into boiling, by filling the pot with water. I add all the ingredients and let the soup cook for 1 ½ hr in low to medium fire. This was the timing necessary for these lentils. Your lentils might want a different timing thus have a taste before turning off the fire.
Once you serve you might add fresh olive oil and vinegar.
