I think the mock death is supposed to symbolize change. It is a dying to the old ways and rebirth to the new ways of Freemasonry. Do they think that Abiff was reborn in some way? Perhaps his death led the birth of insight into the apparent ignorance of those outside of the Freemason cult.
Free Masons love to add as many layers to their symbolism as possible. It helps when you want to lie by omission and say half truths.
