Fresh oregano!
A while ago I wrote about the herb guilds we have planted around our fruit trees. In that post I talked about the different herbs that grow around the trees. One of them being oregano!
It's one of our favourite herbs - both for cooking and medicinally. While it is still fresh and green it's the best time to gather the herb, dry the leaves and use them in all your pasta and pizza recipes.
In midsummer oregano starts to bloom with beautiful purple and white flowers depending on the variety of the herb. At that point we gather the flowers and dry them and use them in wintertime for tea.
On the photo you can see one of our oregano patches. Sadly I did not think to put anything for scale in the photo but it's more than half a square metre. This patch would be more than enough for our yearly consumption of oregano. We will harvest another guild with oregano in it for tea. Still leaves us with a dozen more patches of oregano - plenty of it so we ask all our guests to pick their own herbs when they visit our garden.
Nature is truly abundant and reminds us constantly to be generous with all her gifts!

Oregano can be SO underrated! One of my favourite things to do is make an oregano pesto - great on top of grilled marrows ie. overgrown courgettes!

Why do I suddenly have a craving for fresh homemade pasta sauce with oregano? YUM!!! Really lovely to see such abundance - and such healthy plants!
