Today I bring you this wonderful recipe which is very healthy and free of fat ideal for those who want to keep fit or lose weight. In addition to practice and easy to perform.

You can not stop trying this curry pumpkin cream with zero fat. In addition to being a vegetarian recipe it is also 100% vegan, as it does not contain any animal-based ingredients, not even milk or cheese.

Precisely this is the trick to lighten it. By dispensing with the cream or cream and the cheese that is usually put in most creams, we get to reduce 120 calories nothing more and nothing less, which make it a cream 100% free of guilt.

That is, you can eat it even on a diet. And not because it's light, it's dull or boring. Thanks to the curry, the almonds and the seeds of sesame, you will have on the plate a party for the senses with a delicious flavor and an irresistible look.

Ingredients:

1 kg of pumpkin
2 scallions
3 garlic cloves
300 ml of vegetable broth
1 teaspoon curry
2 tablespoons of sliced almonds
2 teaspoons of sesame seeds
Olive oil and salt

Preparation to make pumpkin cream curry with zero fat:

  1. Roast the vegetables. Peel the pumpkin and remove the seeds and filaments. Cut the pulp into cubes and put them on the oven plate together with the washed and unpeeled garlic, and the chives clean and washed. Sprinkle with a thread of oil and spend about 30 minutes in the oven preheated to 200o. Remove and let temper.

  2. Mix with the broth. Cut the tender green part of the scallions into rings and reserve them for decoration. Chop the rest and peel the garlic. Mash both vegetables with the pumpkin until you obtain a puree. Add the hot broth and 1 teaspoon of curry, and cook 10 minutes more.

  3. Decorate and serve. In a nonstick skillet, toast the almonds without oil. Remove them and add a few drops of oil and a pinch of salt. Serve hot cream sprinkled with almonds, reserved chive rings and sesame.
