Why you should never throw away the papaya SEEDS!

Papaya is a large herb that gives fruits.

Like coconut and banana, papaya is not a tree, but a giant semi-woody grass. The plant grows quickly, but lives for a short time. The fruit, which has the particularity to grow directly on the trunk, can weigh, according to the varieties, from 250 gr to 10 kilos.

Since then, papaya has become a very popular fruit in many parts of the world, thanks to its exceptional properties and delicious flavor, which makes it an indispensable part of a large number of desserts or juices.

Its flavor is close to the horseradish, slightly spicy, but the closest taste I can think of (and that's how I discovered the similarity) is the one of nasturtium flowers and seeds. I have planted a lot of them in my garden and they come back years after years. I use them not only as an aphid "magnet" but as well to flourish my summer salad. nastrium.JPG

Most people who eat papaya throw the seeds, not knowing that they can also be eaten and that they have important health benefits.

  1. They protect the kidneys; The consumption of papaya seeds helps to prevent kidney failure problems, and allows to treat them when they have already occurred. For this particular case, it is recommended to chew 7 papaya seeds, 7 times a day.
  2. Protect your liver; The liver is one of the most important organs of our body (I call it the second heart) because its function is to filter toxins and toxic substances, in order to prevent many diseases. When this organ is affected by a condition, we run the risk of developing chronic problems. For this reason, it's important to give him a little help and help him cleanse himself of the substances he does not need. We are barely aware of what it endures because of our nowadays way of life...
    For this, papaya seeds can greatly help us, especially in the case of liver cirrhosis. Simply grind 5 papaya seeds, mix them with a spoonful of lemon juice, and drink this mixture twice a day for a month.
  3. They improve our intestinal health; Thanks to their high content of anti-parasitic enzymes, papaya seeds improve our intestinal health. They contain an anti-helminthic alkaloid that kills intestinal worms , called carpaine[https://en.wikipedia.org/wiki/Carpaine], which has the ability to eliminate intestinal parasites.
  4. They protect our digestive system; Papaya seeds also have potent antibacterial and anti-inflammatory properties that improve digestive health. Numerous studies have found that papaya seeds fight salmonella, staphylococci and other types of infectious agents.
  5. They absorb excess fat and sugar; Papaya seeds are excellent fat burners for our body. They have the ability to prevent the body from absorbing too much fat and sugar, which speeds up the digestive process and contributes to weight loss.

The golden rule here is to not cook or heat the seeds as you will be advised to do in most of the posts you will read on internet. Comparing three common domestic methods of cooking vegetable i.e. blanching, boiling and slow heating, the results show that the high temperature treatment produced mainly a molecule of no interest (benzyl nitrile); while slow heating up to 40°C maximum produced more of the molecule that makes the healthy work.
So remember to always eat them raw and fresh by accompanying any food that requires the flavor of horseradish or wasabi; the list is long but to name a few, smoked fish fillets, raw fish, sushi, salads, etc ...
I have tried even with oysters to give a visual effect of caviar; not only the illusion is amazing and beautiful but it tastes good as well.

Now for those who have a scientific spirit and need to understand the "why and how" of things, the second part will give you the name of the molecule which is responsible of the miracle: - Glucosinolate[https://en.wikipedia.org/wiki/Glucosinolate] and - Isothiocyanates[https://en.wikipedia.org/wiki/Isothiocyanate]

Glucosinolates are sulphur-containing secondary metabolites found largely in Brassicaceae family, which means that broccoli (especially sprouts of), watercress, daikon and even nasturtium flowers contain that molecule and though are all very healthy as well.



Glucosinolates undergoes hydrolysis readily upon cell rupture by cutting, chewing, fermenting or freezing with the presence of naturally occurring enzyme myrosinase[https://en.wikipedia.org/wiki/Myrosinase] to produce isothiocyanates and/or simple nitriles. Isothiocyanates are known to possess anticarcinogenic properties while nitriles are largely inactive.
Isothiocyanates is a particular glucosinolates hydrolysis product; they are well known for their diverse biological activities ranging from bactericidal, nematocidal, fungicidal, insecticidal, antioxidant, antimutagenic, antipoliferative and allelophatic properties.
Isothiocyanates are potential anticarcinogen, which could inhibit the liver, lungs, colon, breast, ovary, prostate, bladder and pancreas cancer. In vitro and in vivo studies have proven that isothiocyanates inhibits a certain enzyme which is involved in the bioactivation of chemical carcinogens and induces an other enzyme which protects cells or tissues against carcinogenic intermediates.
It also induces apoptosis[https://en.wikipedia.org/wiki/Apoptosis] in various cancer cell lines.
One of the convincing glucosinolates hydrolysis products in cancer studies is benzyl isothiocyanate; Benzyl isothiocyanate is proven to induce cell apoptosis in human breast cells, pancreatic cancer cells and reduced the growth of solid tumors.
That's why, it is very important to preserve the health promoting compounds of isothiocyanate molecules in food until consumption. The food processing conditions should always be optimized to maximize the consumption of the miracle molecule isothiocynates.
