Altın pirinç genetiği değiştirilmiş yani GDO'lu bir gıda olup normal pirinçin A vitamini yönünden zengin halidir. Özellikte gelişmekte olan ülkelerde ve temel besin kaynaklarından birinin pirinç olduğu yerlerde altın pirinç çokça tercih edilen bir besindir. Zira altın pirinçin olmadığı zamanlarda temel besin kaynağı pirinç olan bölgelerdeki insanlarda gözle ilgili çeşitli hastalıklar baş göstermekteydi.

Altın pirinç insan vücudunda A vitaminine dönüşen elementlerin miktarını oldukça artırıcı bir etki göstermektedir. Pirinçin genetik yapısı değiştirilerek, vücutta A vitamini sentezine yarayan beta-karoteni üretebilir hale getirilmiştir. Ayrıca altın diye adlandırılmasının sebebi renginin altın sarısı rengine benzemesidir.
