Caramelized Pineapple With Cream.
The properties and virtues of pineapple are mainly due to the presence of bromelain, a very important enzyme and present above all in the stem; its main feature is in fact to make even the most complex proteins easily digestible.
Already in the 18th century the pineapple stalk was known to have digestive properties and was widely consumed for this purpose.
4 slices of pineapple
200 g of sugar
1 dl of cream

- Remove any zest residues from the pineapple slices, then cut them into 4 wedges and, if you prefer, remove the core.

- Collect the sugar in a pan and melt it on a low flame, making it slightly caramelize.
In another container pour 1 dl of water and bring it to the boil. - As soon as the sugar has taken on an amber color, add the water (when carrying out this operation, the water must be boiling, otherwise the sugar will thicken and lose its creaminess).
- Mix and pass the pineapple slices in this preparation, making sure they are soaked in caramel.
- Collect the cream in a bowl and whip it with the electric whisk.
- Spread the pineapple slices on the individual plates and serve them with a cup of whipped cream aside.
