Greetings to you all in steem Travelers and fellow steemians. I am glad to present to you all the most popular traditional food in my locality.
This is one of the food you will see when coming to Nigeria and Akwa Ibom State in particular.

Ekpang Nkukwo (water yam portage)

Water yam pottage is one of the most delicious food eaten by the indigen of Akwa Ibom State of Nigeria. It is usually prepared for visitors who have not been seen for a while. 90% of people in my state love this delicious food so much even though preparing it is time-consuming and as s result of that when visiting home, or relative, we usually asked them to prepare it for us since we may not have the time to prepare it on our own. If you prepare this meal to your visitors , they will appreciate you so much.

Water yam
Cocoyam leaf
Fish
Salt
Onga cube
Red oil
Perewinkle
Grey fish
Pepper
Scent leaf
Pumpkin leaf

Preparation

Using your kitchen knife, Peel the wateryam and wash it cut it into the size that can fit comfortably into your palm when grating.
Using greater, grate the wateryam to form a thick paste.

Removing from stalk

Removes the fleshly part of the cocoyam leaf from its stalk. Wash it with water, cut it into smaller pieces so that you use in wrapping the water yam paste. Do not use cocoyam leaves that is up to 2 days old to avoid itching in the mouth while eating the food and itching in the anus when passing out excrement.
Preferably, you can use potatoes leaves in wrapping it.

Pour red oil into the pot you want to use in cooking the water yam portage.
Using the cocoyam leaf or potatoes leaves, wrap the water yam paste into smaller sizes

Step 4

After wrapping it, I divided the condiments into two parts, put some and in the food, add onga cube, salt, and every other ingredients. Put it on fire, and wait for about 10 minutes, then add perewinkle, turn it and add the remaining condiments.

At this point, I will wait for about 3 - 5 minutes before putting pumpkin leaf and scent leaf.
Turn it and bring it down from fire.
Your delicious ekpang nkukwo is ready.

The food is so delicious and nutritious. You too can give it a try if you live in a place where you can find all the items.

I like cooking this food because of it's nutritional values.
It is very good for nursing mothers and babies especially if you are on exclusive breastfeeding.
As a nursing mother, I like cooking the tasty food
