Akwa Ibom most delicious meal|| Check out my recipes

Show me a typical Akwa Ibom person who doesn't like this particular meal called "Ekpang Nkukwo" and I'll tell you he or she isn't a typical AkwaIbomite trust me.

There's absolutely no one who doesn't like Ekpang Nkukwo infact like is an understatement, everyone loves it.

Na real Akwa Ibom food o, you won't see it else where apart from here. If other people eat it and prepare it, they were taught by us, without mincing words.

Asides the meal being delicious and sweet, it consumes time a whole lot and has lot of work inside but despite that, it's always sumptuous guys...

Now the 3 major things you need to prepare Ekpang Nkukwo are;

  • Water yam
  • Cocoyam
  • Cocoyam leaves
    Not to worry, pictures will make you understand better. So without those three major things, you can't prepare the meal.

Ingredients for Ekpang Nkukwo are:

  • Water yam
  • Cocoyam
  • Cocoyam leaves
  • Palm oil
  • Periwinkle
  • Dry Fish
  • Cow skin
  • Pepper
  • Salt
  • Maggi
  • Vegetable
  • Crayfish

Recipes for cooking Ekpang Nkukwo:

  • Peel the water yam and cocoyam and wash them properly.
  • Peel the cocoyam leaves and cut it to the shape as you want and wash them.

  • Grind the water yam and cocoyam using Crater, mix them together after crating.

  • Wash your pot and rub a little Palm oil on it, wash your periwinkle and put them inside the pot.

  • Start by cutting the crated water yam and cocoyam to the cocoyam leaves little by little and then you tie it and drop it inside the pot one after the other.

  • Set up your fire and place your pot on the fire and add little water.

Allow it to boil for some minutes, maybe 10-15minutes before adding other ingredients like pepper, Maggi etc.

  • After adding them, turn and allow it boil for 5 minutes or so. Add palm oil, water if it's not enough and other ingredients for a better taste

  • Peel your vegetables, wash and slice it then you add it to the meal and turn.

  • After that it's done, scoop the meal and serve.

  • You can use your hands to eat and you can use your spoon, whichever is comfortable for you use as far as you enjoy the meal.

By the time you're done with all of those it would have taken about 3 hours or so except you have more hands to assist you while tying the water yam and cocoyam, it can take 2 hours or 1 and a half.
