Chicken Roast Curry | Flavors from Bangladeshi Cousine.

Bangladeshi cuisine is all about spice and fresh flavors. We love to add curry with our major meal rice. Especially festive food means all the different rich curries. Chicken roast curry is one of them.

A few days ago, we have celebrated Eid. I prepared this curry to add some extra flavor in our life. Today I'm gonna share with you the detail process of my cooking with the recipe.

What we need?

It's a complicated recipe, needs a lot of ingredients. So it may seem impossible to anyone who is not familiar with this dish. But believe me, the effort worth it.

  • Whole Chicken 1 piece (1.5 KG)
  • Onion, garlic, zinzer, cumin paste
  • Vegetable oil
  • Red cilli powder, mix spice powder.
  • Green chilli
  • Salt, sugar
  • Hot spices/curry spices (Fennel, Bay leaves, Cloves, Cinnamon, Black and green cardamom pods, Cumin)
  • Sour curd
  • Nut (peanut+cashew nut) paste
  • Raisin (optional)
  • Ghee (melted butter)

Let's see the detail process!

Wash and cut the chicken in big pieces. And merinate it with red chilli powder, salt, and mix spice powder for at least half an hour.

Fry them gently in vegetable oil for a minute until golden brown.

Set aside the roasted chicken pieces and now it's time to cook the spices.

Add all the spices, spice paste on a hot pan with one cup of oil; except green chilli, sour curd and nut paste. You need to put the dried spices 2-3 pieces. And for the spice paste, it's 2-3 teaspoon. You can follow this [recipe] for more detail of the measurements.

Cook the spice for a few minutes. Now add some salt, red cilli powder and some water. Don't add too much because our chicken already have this ingredients. Cook the spices for 10-15 minutes.

Then add the sour curd and the nut pastes. And cook it for another 10 minutes.

The spice will be ready after about 15-20 minutes of cooking. Now add the roasted chicken. And mix the chicken with the spices properly.

Add some water time to time, put a lid on and cook it for another 15 minutes.

Just before truing off the heat, add some Raisins, 5-6 green chillis, and a tablespoon of sugar to balance the taste.

Add a tablespoon of ghee (melted butter) before turning off the heat.

And it's ready to serve!

You can serve it with roti or rice, whatever you want. This curry is not so spicy, it's balanced/sweet curry recipe. So it's a good going with roti and rice, both.

The flavor is very enriched with ghee, nuts, and all the spices. You will love it for sure. Try it!
