Blessed day dear community; Because Venezuela is cocoa and Paria's is exquisite, Truchi Café incorporates a new product on its shelves; It is about chocolate, a food we all love and, although it can be found in many presentations (powder, pasta, bar, etc.), this time we want to emphasize our favorite, the chocolate bar.


There is no place in the world where we go and we do not come across a beautiful chocolate bar, right away our first thought is to acquire one. But do you really know how it's done and what is the technique to make it look so incredibly delicious? Well, I'll tell you about it here; so don't stop reading.

Start with the grain
To prepare an incredible chocolate bar, the first step is to make an impeccable choice of cocoa beans; That is why you must be attentive to:

🍫Choose large, well-formed grains, avoiding green grains and soil impurities.

🍫The beans must go through a fermentation process; in fact, without fermentation it is not possible to make chocolate.

🍫The drying of the grains is another of the steps with which you must be very careful; And it is that they should be dried by placing them directly in the sun on top of a piece of wood and removing it in periods of 20 minutes. (A not recommended practice is to dry the grain by placing it directly on the ground).

🍫Roast the beans for up to 45 minutes. This process must be done very carefully because, if the grains are burned, they will give a less pleasant taste to the chocolate.

Tempering techniques
Tempering the chocolate is a technique by which the cocoa paste is subjected to certain temperatures of heat and cold to ensure that it takes the perfect consistency, is easily removed from the mold, takes on the expected shine and is preserved over time. For these reasons, there are two very similar techniques by which the tempering of chocolate can be achieved. These are by reverse water bath and by the marble technique.

The first is based on putting the chocolate in a double boiler until its temperature rises to 45 ° and then transferring it to a cold water bath and lowering its temperature to about 29 ° and then raising it again. The second performs a similar process, but to lower the temperature it uses a piece of marble.

Tips for the ideal tempering
Although it is easy to read, there are certain considerations that must be taken in order not to spoil the process; Therefore, here are some tips:

🍫It is extremely important to use a kitchen thermometer to have accurate temperatures throughout the tempering process.

🍫While tempering is taking place, you should not stop stirring the chocolate with a spatula.

🍫Great care must be taken not to let water particles get into the chocolate, this will ruin the tempering.

🍫Each type of chocolate is handled differently in terms of temperature, so do not forget to evaluate which one you are going to work with before starting the process.

🍫Do not place the chocolate directly on the fire.
