El pastel de chuco is a rich typical dish of Venezuela specifically from the eastern areas of our beautiful country, such as Isla de Margarita, Sucre State and Puerto la Cruz. The pooch is a fish similar to the stingray. It has a polka dots on its body and a tail with a sting on the very poisonous tip.

Ingredients:

1 kilo of fresh or salted dogfish
2 butter spoons.
2 tablespoons of oil onotado.
1 onion, 3 scallions.
3 garlic stew, 4 garlic cloves, 1 red paprika
8 olives
2 tablespoons small capers
2 tablespoons of currants.
½ cup pearl onions
½ cup of sweet red wine
1 tablespoon of salt.
6 grains of whole black pepper.
3 ripe bananas.
1 cup of oil
4 eggs

Preparation.

1. Boil the fish in a pot with water for 15 minutes. Drain, crumble and reserve.
2. In a frying pan, heat the butter with the oil onotada and make a sofrito with the onion, garlic, green onions, garlic, paprika, and sweet pepper, all finely chopped. Add the peppercorns and salt. Cook until wither. Add the shredded fish to the sauce. Mix everything very well and cook for 20 minutes.
3. Add capers, olives, raisins, pearl onions and sweet red wine. Cook 15 minutes and rectify the salt and pepper. Lower fire and reserve.
4. Fry the bananas on wheels. Drain on absorbent paper and set aside.
5. Take 4 eggs and separate the whites from the yolks. Beat the egg whites until stiff with a pinch of salt and red wine.
6. Place in a baking dish a first layer of egg whites, then a banana wheel and finally a fish stew. Repeat this until you finish the cake with a layer of bananas.
7. Bake the cake at 250 ° F for about 20 minutes until golden brown.
