Orange meringue candies

Here is a nice recipe that we made yesterday in the Tupperware workshop. Since it's Christmas, I wanted to offer a cake worthy of being on the Christmas menu. Allow 1 hour for the complete cake in 5 steps:

1- Biscuit:

100ml orange juice
120gr melted butter
120ml sugar
130gr flour
5ml yeast
2 eggs

2- Orange curd:

200ml orange juice
100ml sugar
15ml cornstarch
3 eggs
peel of an orange or lemon

3- Syrup:

200ml orange juice
50ml icing sugar
30ml of Cointreau

4- Meringue:

3 egg whites
150ml icing sugar

5- The assembly, but first of all at work! everything must be prepared!

Preheat oven to 180 degrees.

Biscuit: (This is a Tupperware recipe, so we use Tupperware utensils) In the microplus pitcher, melt the butter 2mn to 500 watts. Add orange juice, sugar, flour and baking powder. Mix to obtain a nice homogeneous paste. Add the eggs, stir again. Place the edge silicone sheet on the cold rack of the oven, spread the biscuit dough with a spatula so that it covers the sheet completely. Bake for 16 minutes.

When the baking is finished, put a clean cloth on top of the biscuit and wait 5 minutes before unmoulding it.

Orange Curd: In the micro plus pitcher, mix sugar, cornstarch and eggs. Blend with orange juice and zest. Cook for 6 to 600 watts, stirring halfway through cooking. Set aside in a bowl to cool.

Syrup: In the microplus pitcher, whisk the orange juice, sugar and Cointreau and cook for 4 to 600 watts, stirring halfway through cooking.

Meringue: Whip the egg whites in the speedy chef, add the icing sugar to tighten the whites. Set aside in a socket pocket.

Congratulations! you did a good job, it's time for the editing.

Unmould the cookie on a cutting board and make 3 identical rectangular strips.

Place the first layer of biscuit on a baking tray or on the silicone sheet. Soak it in syrup with a brush. Poach the curd orange on the whole surface of the biscuit strip or spread it with a spatula.

Place the 2nd biscuit strip and repeat the operation.

Finally, place the third biscuit strip, soak it and pocket the meringue nicely on top.

It's almost over…

All that remains is to bake the entremets in the oven for a few minutes at 220 degrees until the meringue is lightly coloured.
