Zuccini Pasta // VEGAN and GLUTENFREE RECIPE
Dear friends,
Here is another fresh and light recipe. It’s just perfect for this hot summer: Zuccini Pasta with Tomato salsa and Avocado!
Ingredients
2-4 Zuccinis (either 2 big or 4 small Zuccini‘s)
1 Carot
2 Onions
2 Garlic cloves
A bunch of Basilicum
1 Avocado
6 Tomatoes
Olive Oil
Salt
Pepper
Optional: squeeze of lemon/lime
Step-to-Step-Guide
Zuccini Pasta
- Use a spiral vegetable slicer to slice the Zuccini‘s and carot.
- Season the vegetables with salt and pepper.
- Take a Pan, add some olive oil and 1 chopped onion and chopped garlic clove to it.
- Add your Zuccini/Carot Pasta and fry it for ca. 12 minutes, so that the vegetables keep their fresh coloures and crisp.
Step-to-Step-Guide
Tomato Salsa
- Chop Onion and 1 garlic clove and start frying it in a pan.
- Cut fresh tomatoes into slices and add them to the pan.
- After 5 Minutes add ca. 0.1 liter water to it and let it cook for another 5-8 minutes till the tomato slices start to melt. Season with salt, pepper and fresh basil.
Serve the pasta with tomato salsa and add some slices of fresh avocado and fresh basil on top. I also like to add some squeeze of a lemon or lime on top. But that’s totally up to you!
