How would you tell somebody that their cooking is poor without offending them?
As always, its best not to negatively criticize the meal/cooking out-rightly without suggesting ways to improve it.
I would try to be around when next the person intends to cook the same meal again, then I would actively tell the cook why putting a certain amount of a particular spice/ingredient at a particular time will make the meal taste better!

There is no easy answer to that question. After all telling someone from Europe or Asia or Africa that their food sucks would look very different from each other.
Some people and entire nations are very touchy about this subject, while others can take feedback without being offended.
ps.
did you consider using some photos in your publications? right now your posts dont have tumbnails and it makes them look like: either spam or post downvoted to the point that pictures are not being displayed.
