The oven, eh? Here I've been waiting for winter to room dry my jerky like a sucker. As for the gristle, it's always a tasty chew to spit at the dog once the flavors gone.
I actually do all my jerky making in a dehydrator. I prefer the oven method but I got in trouble with my domestic supervisor for making messes and was banned from using the oven.
