3 STEP Cold Beetroot Soup For Hot Summer Days / Traditional Recipe + Original Photos

I bet that every country has some random foods that would sound more than strange at first for an odd foreigner's ear but they actually taste really really good (and when I say really really good, I actually mean it too).

I am from a country that people eat really BASIC which means, veggies, dairy, meat, fish. Basic, isn't it? We do not go well with snails, insects, random blood sausages or anything that goes beyond our limits, and the limits are pretty clear.

However, we still are pretty random for some people and I would not dare denying that because it is true as it goes:
We eat Potatoes with everything. even if it is potatoes with potatoes (Check Cepelinai for reference).

Oh, and we have this famous dish called Cold Beetroot Soup that is a must for every summer day.

It is not only super healthy but filling too. And... Surprise, surprise... One eats it with potatoes. Usually.

Okay... let's move on because I can feel that impatience all around and I see you just dying for the recipe.

So, roll up your sleeves, cuz' we are starting!

For 4 people you will need:

2 cucumbers, cubbed
1 jar of pickled red beets (200 g)
1 l Kefyr (3,2 proc fat)
1 cup of Greek yoghurt (10 proc fat )
salt, pepper, fresh dill

FOR A MORE TRADITIONAL EXPERIENCE: BOILED SLICED EGG ON TOP

Step 1: get kefyr into freezer for some 10 min, it has to be super cold. Ey, but we do not want kefyr ice cream, okay? Well, at least not this time.

Step 2: take a huge bowl, add cubbed cucumbers, red beets with its juice that will add some nice acid flavor, pour yoghurt, add salt, pepper and fresh dill.

Step 3: Pour kefyr into the bowl and mix everything well. Serve with boiled eggs on top (if you are ready for a real traditional experience).
