Cookie Pops


INGREDIENTS

one cup unsalted butter
one cup sugar
one tsp vanilla
one egg
two tsp baking powder
half tsp salt
three cups all-purpose flour
one third cup butter
half tsp vanilla
one tbsp milk
one cup strawberry jam
three cups powdered sugar
three large milk chocolate bars

DIRECTIONS

In a large bowl, combine together flour, baking powder and salt. Set aside.

In the bowl of a stand mixer, put butter and cream on low speed. Beat in vanilla and sugar then reduce speed and put the egg. Scrape down sides and continue to mix till well blended. Put dry ingredients to wet, and stir on low till blended.

Roll mixture into golf ball-sized balls and place on prepared cookie sheet. Bake for fifteen to twenty minutes. Set aside to cool, then put in a food processor and pulse into rough crumbs.

For the buttercream: In a bowl, put butter and beat till light. Put vanilla, powdered sugar, strawberry jam and milk. Beat on low speed.

Put cookie crumbs in a bowl, and fold in half of the buttercream. Put more if needed to reach a moldable consistency. Roll mixture into small balls and place in refrigerator till firm.

Stick skewers into chilled cookie pops and dip into melted chocolate. Chill till firm, then enjoy!
