INGREDIENTS:

one lb unsalted butter
one small onion, coarsely chopped
three tablespoons garlic, finely chopped
one teaspoon cardamom pod, crushed lightly with the side of a knife blade
one teaspoon fenugreek seeds
one teaspoon ground cumin
one to two tablespoon gingerroot, finely chopped
quarter teaspoon grated nutmeg
one teaspoon dried oregano
half teaspoon ground turmeric
five to six basil leaves

INSTRUCTIONS:

Put butter in a medium sauce-pan over low heat and dissolved.

Simmer till the surface is completely coated with foam. Take care not to let it brown.

While simmering, skim off the foam as it rises to the surface till completely clear.

Add all the remaining ingredients. Continue cooking on low fire for about fifteen to twenty minutes. Pass it through a cheese cloth or sieve . It is now ready to be used . It can be stored in a tightly covered container for about a month in the fridge.
