A Different Sandwich - Button Mushroom, Zucchini & Corn Sandwich

I personally get tired of monotonous meals. That is why I try come up with new ideas for my meals on a daily basis. Today I would like to share with you this sandwich recipe which I have created and which can be a great breakfast or snack idea. Eating this sandwich for breakfast will give you energy and a feeling of fullness to keep you going till lunch. It is easy to make and very tasty. Bon appetit!

Ingredients:

1 baguette
2 ½ cups sliced mushrooms
¼ cup corn
Half medium onion
1 tbsp chopped parsley
1 medium zucchini
Pinch salt
Pinch thyme
Pinch pepper

Yield: 2 sandwiches

Preparation:

Peel and slice the onion. Slice the zucchini lengthwise into thin slices. Cut the baguette into 2 parts and half them lenghtwise.

Heat vegetable oil in the pan, place in sliced onion and sauté for 5 - 8 minutes until yellow, stirring occasionally. Add sliced mushrooms, salt, thyme, pepper and sauté for another 10 minutes stirring occasionally. When the mushrooms are done remove them from heat and stir in parsley.

Heat up vegetable oil in the pan over medium heat and place in zucchini slices. Fry them on each side for 2 minutes. Place the slices in the sandwiches along with sauted mushrooms and corn.

Preparation time: 10 minutes
Cooking time: 25 minutes
