On Sundays, to rest

It's Sunday and I do not know about you but it's the days I least want to cook, it seems like a perfect day to rest, to eat little and light, so I found a recipe that seems perfect for those Sundays or any day we do not want to spend much time in the kitchen.

This is a simple and very rich recipe, perfect as a garnish for both fish and meat, or to eat only with a little white rice, anyway these roasted tomatoes with Parmesan cheese I'm sure you'll love them. You can use the cheese of your choice as mozzarella for example.

Ingredients:

  • 10 -12 tomatoes (pear variety)
  • 2 tablespoons bread crumbs
  • 2 tablespoons grated Parmesan cheese
  • Black pepper
  • Oregano
  • Olive oil or the one you use in your meals
  • Salt

Preparation:

We preheat the oven to 180ºC, while the oven takes temperature we wash the tomatoes well and cut them in half, place them on a baking tray with the cut part up. Season with a good spray of olive oil, sprinkle with the oregano, ground black pepper and a little salt, only a little since the cheese will bring more salt, When we have the hot oven and introduce the tomatoes and roast one 30 -40 minutes depending on how mature they are, the more mature the less they will take to roast. Prepare the mixture for the gratin, in a bowl add the cheese, bread and a drizzle of oil, stir. Once we have the roasted tomatoes, we take them out of the oven, cover them with the mixture that we have prepared and reinsert them into the oven, which we will have raised to 200ºC, let it grill in the oven for 10 minutes until the surface takes a nice golden color.
