As some of you may know I have been messing around with the keto diet and other similar systems of late, this means new experimentation with cooking, which has been quite a bit of fun and a interesting learning curve.

The keto diet , in basic terms, means you cut carbs and sugars... sounds simple enough, but it can really kick your ass once you start reading labels and actually seeing what is in the everyday foods you eat.

Bread has been very much missed in my diet, and while i have been having a low carb bread (85% less), it still felt like i was cheating. So we had a crack at this Could Bread i have heard many talking about and i must say i was pleasantly surprised :)


Ingredients


Cloud bread
- 2 large eggs
- 2 Tablespoons Greek Yogurt
- 1/4 teaspoon Baking Powder
- A pinch of Salt

Sandwich Contents

  • Ham
  • Cheese
  • Tomato
  • Cucumber
  • Beetroot
  • Lettuce
  • Mayo

Method


  • Preheat oven to 200c
  • Separate egg yolks from white in to two bowls
  • Place baking powder in egg white bowl and whisk until foamed and peaks hold their form.
  • Place Yogurt and salt in egg yolks bowl and whisk
  • Add yolk mixture into whites mixture and gently fold until combined
  • Spoon out on to baking tray lined with parchment paper (should make 6 units in total)
  • Bake for 10-15 min in oven

  • Build your sandwich with remaining ingredients!!!

Additional Notes


  • It took about 20-25 minutes to get this sandwich built from start to finish, i thought i would take longer.
  • The Cloud Bread does its job well in substituting for 'real bread', it feel delicate but holds together well.
  • The taste of the Cloud Bread on its own is pretty bland, but you dont notice when its topped with whatever you want to put on it.
  • Apparently these can keep for 3-6 days in the fridge and can also be frozen, test soon to come.
