Gazpacho from melon

Usually the main ingredient of this Spanish cold soup is tomatoes. But imagine how surprised friends, seeing on the table an unusual gazpacho yellow-orange color.

Ingredients

• 1 small melon (1-1,5 kg);
• 1 small fresh cucumber;
• 1 small red onion;
• 2 teaspoons of salt;
• ½ cup olive oil;
• ⅓ a glass of water;
• freshly ground black pepper to taste;
• several branches of mint.
  
  

Preparation

Cucumber and onion peel and finely chop. So do with the melon pulp (do not forget to remove the seeds). For this recipe it is better to use mid-ripening varieties like "collective farmer".

Using a blender or food processor, grind it all in puree, adding water and salt. When the mass becomes uniform, add olive oil and freshly ground pepper. Again, mix everything thoroughly.

Serve gazpacho chilled, decorating with sprigs of mint.
