Tomato Soup Recipe

In rainy weather and taking advantage of the tomato harvest season, I decide to share this delicious tomato soup. This tomato soup is a very easy recipe to make, its ingredients are easy to get. Making it, is a good way to consume more homemade soups at home. What's more, we can make more and save it for another day. Well covered, it can last more than a week in the fridge. Especially in these times of power outages after hours helps us to feed quickly.

Ingredients:

  • 1 kilo of tomato.

  • 1 onion.

  • 2 carrots.

  • 3 cloves of garlic.

  • 1 teaspoon dried thyme.

  • 1 teaspoon dried rosemary.

  • Some fresh basil leaves.

  • 1 teaspoon of sweet paprika.

  • Salt and pepper...

  • Olive oil.

Instructions:

First, peel the tomatoes. But instead of doing it one by one, I give them a very useful tips. With a knife we make a small cut, in the shape of a cross, in the base of each tomato. About 1cm deep. Then we put them in a casserole, with plenty of boiling water and leave here a minute. After this time, the shell will have come out almost alone.

Then we prepare the sofrito of our tomato soup. In another casserole we put to heat to slow fire a dash of oil. When it is hot add the cloves of garlic, the onion and the carrot. All well chopped. Place sl and pepper to taste, then stir with a spoon. Let it cook for about 10 minutes.

Once this is done, add the peeled tomato, add the thyme, rosemary and paprika. Mix again and let it cook for another 15 minutes.

Pour this well-cooked vegetable into a whisk. We also add the water that we had used to blanch the tomatoes and beat everything until we get what will be our tomato soup.

Return the soup to the casserole and heat again. Let it cook over a low heat for 5 more minutes, so that there is an exchange of flavours. And finally sprinkle with a little chopped fresh basil, which will give it a very interesting touch.

And that's it! Tomato soup is a somewhat forgotten dish nowadays. But it is a very rich recipe and keeps us warm in these rainy times, easy to make and with few ingredients.
